Puff pastry tarteletts with beetroot and zucchini

 

This is a dish that many of my friends have liked very much! Super easy and super quick!

What you need:

– puff pastry (5 sheets)

– 2 large beetroots 

– cream cheese

– goats cheese

– salt & pepper

– balsamico

Take out the puff pastry 30 minutes prior to cooking and let thaw. Peel and boil the beetroots, then slice thinly and place on a parchement paper. Drizzle over some balsamico and roast in the oven for about 10 minutes until not soggy anymore. 

Roll out the puff pastry slightly, then score the puff pastry 1cm around the corners. Spread out the cream cheese (not on the edges) and then layer with beetroot and thinky sliced goats cheese or zucchini ( sliced with vegetable peeler). Season with salt and pepper, brush pastry edges with egg and let bake for 15-20 minutes in a 200 degree oven until the pastry is cooked through. 

  

Serve with walnuts and rucola!

Hash brown with crayfish and avocado

Crayfish and avocado topping:
– 150g of crayfish
– 1 big avocado or 2 smaller
– 1/2 red onion
– 1 chili
– juice of 1/2 lemon
– 1 tbsp of mayo
– 2 tbsp of sour cream

Slice avocado into cubes, chop chili and red onion. Mix in the rest of the ingredients and let sit in the fridge for 30 minutes.

For the hash browns, peel 4 mid sized potatoes, shred the potatoes with the smallest blade in the food processor, add a pinch of salt and pepper. Form the shredded potato into four patties, fry in butter on a hot pan and press them flat. Fry until crisp and golden! Serve with crayfish or avocado topping or fish roe and smetana.

Frenchy

Yesterday me, Mette and Martina went for a nice dinner to Frenchy in Telliskivi. Frenchy is a french restaurant, quite small but yet trendy and fresh. I really like the restaurants in Telliskivi, as they are situated in old industrial facilitues, which makes it charming and interesting. So, back to Frenchy, the food was tasty and a good value for money ratio and the staff friendly. We shared a starter, a cheeseplate, charcuterie and some camembert cheese (8€ and 6€). Yum! As main I ate filet mignon (16€)with herbbutter and homecut french fries, the beef was delicious! Martina ate duck with cabbage and pumpkin and Mette ate a sallad with different meats. I really recommend this place, book a table during weekends.
